We raise Idaho Pastured Pigs (IPP) from our breeding stock on the farm. We also bring in a few other pigs when we have space. Those breeds vary. This year we have American Guinea Hog x KuneKune. We have also seen Herefords Mulefoot and Durocks in the past. These will vary with the year. We find the best available feeders each spring that match the timing, price, and management practices.
The IPPs will grow to about 250 pounds of live weight on our pastures. A larger pig will get up to about 300 lbs. We charge by hanging weight because that is how our Wisconsin processors measure the animals. The hanging weight is about 72% of the live weight. Then the cuts you get from that are about 67% of the hanging weight. The largest discrepancy is going to be the processing. If you minimize the value-added selections you have done with your pork the less the cost would be. If you have larger amounts smoked and sliced, the costs will increase.
We are currently using 3 different processors. We use Beck’s meat in Oshkosh, Quality Cut meats in Cascade, and Pine River processing in Pine River. We are also working with some new processors like Roskoms and Harpers, so watch for dates with them as well. Each has a little different style of cut and optionality. I can answer specific questions about each of these choices and dates for each scheduled processor when we work out which is best for your needs. Proximity to home is often the most important factor.

• Half hogs: $6.50/# hanging weight + processing fee
o Average half hog total: 65-75# of pork depending on processing, $750
o Breaks downs into about $600 for the pork + $150 for processing
o Bottom line: About $10-12/# of packaged product, depending on your processing choices
